Features of the Nagi series

The new series with which Nenohi enters the market is called Nagi. Nagi refers to a sacred tree in Japan, located in the garden of the Shinto shrines (Kumano Hayatama Taisha), which stands for building good relationships and the unbreakable bond between people. This series uses almost the same reliable steel as the Nenox S Series. The knife is largely handmade, with great precision, and the entire process is carefully inspected and controlled. They remain mysterious about the exact steel composition much like a chef who does not reveal his recipes.

During the grinding process, the Toishi (waterstone) rotates at a lower speed to prevent heat build-up in the steel; this allows the maker to keep the steel as hard as possible. Despite the disappearance of the balance point at the rear of the handle, the Nagi has remained the same weight as the S. What happened? After feedback from users, the handle was made slightly thicker at the back, and the bolster was raised a little. Thanks to this raised bolster, the knife is also easier to sharpen. One of the best handles currently available on the market — as you would expect from Nenohi.

Micarta is a composite material made up of layers of linen and epoxy that are pressed together under high pressure and temperature. This creates a super-strong laminate that is resistant to oil, acids, water, and temperature fluctuations ideal for a knife handle.

The Nenohi brand was founded in 1993 in Japan, basically because there was a high demand for western style stainless knives. At that time many chefs from Tokyo used the robust stainless knives of European brokerage, but often complained about the enormous difference in sharpness and sharpness retention compared to the Japanese carbon steel.
