Elwin de Veld likes to share the knowledge that he gained in Japan and that takes him to special places. In recent years he held various workshops in the kitchens of restaurants. He showed the brigade of Osteria Francescana (Massimo Bottura) how to sharpen Japanese knives as well as possible on a whetstone and explained the ways in which to properly maintain knives. He also shared his knowledge in the kitchens of De Librije (Jonnie Boer), La Vie (Thomas Bühner), Pure C (Syrco Bakker) and The Jane (Sergio Herman). The enormous focus and attention of brigades and the interest in absorbing and internalizing all shared knowledge is always special.
