These knives from the Shiosai series are made from SG2 powder steel, known for its impressive hardness and long-lasting sharpness. With a hardness of around 63 HRC, these knives glide effortlessly through various ingredients and maintain their sharpness even with heavy use.

What makes these knives truly special is the Kiritsuke point. A refined tip that offers extra versatility and precision. Whether you're performing delicate cuts or tackling more robust tasks, this knife can do it all. Each knife also features a subtle Tsuchime (hammered) finish, which not only enhances its beautiful appearance but also helps reduce food from sticking to the blade. You can see the hammer pattern in the image below. The knife actually looks a lot like the Shiosai VG10, but the hammer pattern is just a bit different and the core is SG2.
