The Gunjo series is made in Seki, Gifu prefecture. Gunjo is a Japanese word that stands for the specific dark blue color of the pakka handle. If you had to translate it, navy blue would be the closest, but the Western interpretation of that color is different from what the Japanese interpret.
The knife has a core of VG10 and 16 layers (16|1|16) on both sides, making a total of 33 layers. Between the heel and the bolster it slopes slightly forward, creating a nice "finger rest" for even more control.
The pakka handle is secured with custom rivets, which are stronger than standard rivets. Pakka is durable, gives a pleasant hand feel, maintains the right temperature and does not become slippery

Now, speaking in 2019, day in day out knives went through my hands, probably I have seen a big part of all chef knives. No, a ROOIJ knife is not a new invention of a knife, it's a process of experience, listening to the end user and negotiate with the knife maker.
