Features of the Zanmai Custom

The new petty knives from Mcusta Zanmai offer a glimpse of what is coming later this year. A new concept in which you can assemble a fully custom knife yourself. This includes choosing the model, the handle, the blade, and even the screws that hold everything together.

For now, this small preview consists of several fully assembled petty knives, created to showcase what will be possible.

SPG STRIX

SPG-STRIX steel is one of the most exciting new steel types in the knife world, especially for high-end Japanese kitchen knives. Like SG2, it is a powdered steel developed by Takefu Steel. The name “STRIX” refers to a strong matrix structure (STRong maTRIX), indicating that the steel is designed with a stronger base iron rather than simply adding more carbides. This gives it unique properties compared to traditional powdered steels.

Compared to other hard powdered steels, STRIX is engineered to be easier to sharpen on whetstones. A stainless steel knife with high hardness that is also easy to sharpen makes it an ideal choice for professional chefs.

Elwin de Veld about Zanmai Mcusta

President Tomohiro Hasegawa, is young compared to other knife factory owners in Seki region. The company itself is also relatively young in the tradition of knife makers. Making chef knives now for a little more then 10 years, the focus was was always on scissors and pocket knives. All knowledge in the past years gained is passed to the new generation. This combined with new technologies makes Zanmai a well respected knifemaker.
"We are classmates", as Tomo san always refers to when we meet. Both born in 1974, living the knife life and passionated in what we do: Zanmai!
