Gradually, I’m beginning to understand the Japanese market of subcontractors. There are many small companies that are extremely skilled in their craft: making handles, forging, or applying urushi lacquer. Each has its own specialty. They often work for larger companies that book their entire schedule a year in advance. It’s difficult to get in there—you really have to know your way around.
That’s how I came across HOU: just a few individual models in the display case at the headquarters of our subcontractor. I immediately saw that this was a finely made knife—thin blade, long grind, and a beautifully tapered octagonal handle. A lightweight model, yet properly balanced.
“All I know is that the blade is made of a high-carbon stainless steel.” The smaller petty and office knives are especially nice for delicate work—think vegetables and fruit.
