Elwin de Veld about MAC knives

When I started sharpening knives, together with my grandfather in 1994, we visited many restaurants in The Hague to sharpen knives. Later, when I had taken over the sharpening shop, I had to go out myself. In 1998 I entered the kitchen of restaurant Seinpost, then still with Paul van Waarden as chef, for a round of knife sharpening. Gert Jan Cieremans, the last chef of the now closed Seinpost, had worked there as chef de parti for 2 years. Mister Kuntz also worked there in the kitchen and he had a MAC. He was completely lyrical about it. He allowed me to sharpen it and at that moment my love for Japanese knives was born. A pleasure to sharpen, razor sharp and also extremely long lasting compared to all the knives I had sharpened at that time.

My first order at MAC were 6 knives from the Original series. I passed these on to chef friends to see what they thought of them. Of course I never got those first models back, best knife they had used up to that point. Since then MAC has also become an indispensable part of Dutch restaurant kitchens.
