Features of the Raid series

The Raiden Series by Nenohi is a rare and exclusive line, produced only in limited quantities and made exclusively to order. Each knife is forged from Nenohi’s trusted, high-quality steel.

Every blade is crafted largely by hand, with utmost precision and care. Each stage of the process is meticulously inspected. The exact composition of the steel remains a mystery, much like a chef who never reveals their secret recipes.

During sharpening, the Kaiten Toishi (water stone) rotates at a low speed to prevent heat buildup, allowing the maker to maintain the steel’s maximum hardness.

The blade is finished with a special fluorine coating that prevents food from sticking, enhances corrosion resistance, and provides heat resistance. (Note: as with any coating, gradual wear may occur over time with prolonged use.)

The result is a beautifully thin, high-quality blade paired with an ebony wood handle, a combination that delivers the perfect balance, remarkable sharpness, and the exceptional craftsmanship for which Nenohi is renowned worldwide.

The Nenohi brand was founded in 1993 in Japan, basically because there was a high demand for western style stainless knives. At that time many chefs from Tokyo used the robust stainless knives of European brokerage, but often complained about the enormous difference in sharpness and sharpness retention compared to the Japanese carbon steel.

After many years of design, shape testing and testing of steel alloys, Nenohi launches its first western style knives under the name Nenox Premium.
