Masahiro is a well-known knife maker from Seki, Japan. This high-end series, forged as honyaki from MBS-26 steel, makes for an ideal knife for both professional chefs and enthusiastic home cooks.
Honyaki literally translates to “true” (hon) forged (Yaki), meaning the blade is made from a single piece of steel rather than multiple layers. The knife has a hardness of approximately 58–60 HRC, making it well suited for maintaining sharpness while remaining easy to care for. Compared to other honyaki-forged knives, this series is slightly less hard and therefore less fragile in daily use.
The handle is made of synthetic material, which makes the knife sturdy, durable, and hygienic. The blade is finished with an asymmetrical 70/30 grind. Masahiro believes this grind enhances sharpness and cutting performance.
