Petty • 150 mm • 3 layers • Chromax-steel • Japanese walnut handle • for both left and right handed use
The Chromax series is a very affordable line from the renowned knife maker Baba Hamono. The knife is made up of three layers of steel with a core of Chromax. Baba's knives are known for their thin and finely honed blade. The core has a high polish that contrasts well with the sandblasted clad. It is finished with a traditional Wa handle (octagon) made of walnut wood. This knife is not for beginners. Due to its high hardness combined with the thinly honed blade, the knife is susceptible to "chipping."
Chromax is a semi-stainless steel (hybrid) that is favored by high-end knife makers such as Baba Hamono. What makes this type of steel so special is its high hardness (62–64 HRC). This is due to the percentage of carbon that is added to the steel.
Chromax is ideal for enthusiasts who want to experience the benefits of carbon steel but do not want to bear all of its drawbacks. By adding a small percentage of chromium, the steel is less prone to corrosion compared to White steel (shirogami). However, it is important to thoroughly dry the knife during and after use to prevent rust.
This steel is easier to sharpen than more well-known steel types such as VG10 and SG2, making it very suitable for both professionals and hobbyists.
Baba Hamono had been on my list of places to visit for a long time. When Baba contacted me to do business I knew I had to jump in right away. There are some very important and leading sharpeners in Sakai and Baba Hamono is one of the top 3. It is an honor to do business with these knife makers, who bring tradition and modern craftsmanship together in a unique way.
Knives with a double-sharpened blade and a double shinogi are not new. The refinement with which Baba Hamono finishes his knives can certainly be called unique. The thinning of the blade has been so perfected that there is no unevenness, as you often have with cheaper inferior models. An extremely thin cutting surface provides unparalleled ease of cutting.
