Bunka • 160 mm • Olive Wood • AUS10 • Japanese Handle • Suitable for Left- and Right-Handed Use
This bunka is compact, tall and slightly front-balanced. Its finely ground K-tip makes it ideal for precise cutting tasks, such as finely slicing onions and garlic. But this versatile knife has much more to offer. Thanks to its slightly heavier feel and beautifully thinly ground blade, it also excels at cutting meat, fish and vegetables. A true all-rounder that certainly won't disappoint.
The Damascus pattern flows across the blade in a unique way, making every knife one of a kind. The blade consists of sixteen layers of stainless steel, surrounding an AUS10 steel core supplied by the Japanese steel manufacturer Aichi. The core is hardened to 60 HRC (Rockwell), allowing the knife to retain its sharpness for a long time while remaining easy to sharpen.
The authentic, octagonal olive wood handle gives the knife a traditional appearance while providing a comfortable, natural feel in the hand. The balance of this series is slightly forward-weighted, making it particularly well suited to the pinch grip.
Sakai, just south of Osaka, is renowned for its many specialised subcontractors. Larger knife manufacturers often outsource individual components or semi-finished products to companies that specialise in a particular stage of the production process.
Fujii-san originally specialised in sharpening knife blades, but now also produces his own line of knives under his name. He works exclusively through intermediaries, which is why we receive his renowned knives through Touroku Sakai.
Fujii-san is the third generation of knife sharpeners in his family and has more than 50 years of experience in the knife industry. Together with three young craftsmen, he creates these exceptional knives with great dedication, skill and passion.
