This series is constructed from three layers of steel, also known as a stainless-clad construction. The Shirogami #1 steel core is sandwiched between two layers of stainless steel. This provides the cutting performance and feel of carbon steel, combined with the ease of use of a stainless steel knife.
Shirogami #1 is often regarded by knife makers as the ultimate steel for chef’s knives. Thanks to its minimal alloying elements, the steel is exceptionally pure and refined. It can be sharpened to a very high level of sharpness and, in practice, retains its edge for a long time. After use, it is of course important to store the knife dry.
