Camellia oil, also known as Tsubaki oil, is used for maintaining carbonsteel knives (such as Shirogami and Aogami). By applying a thin layer to the blade, moisture is repelled and oxidation is prevented. It can also be used to treat and protect Japanese knife handles.
The oil is extracted from the Japanese camellia (Camellia japonica) and is unique in that it does not become rancid over time. Tsubaki oil is non-toxic and therefore safe for contact with food.
