The word Shiosai translates to “the sound of the waves.” This concept is reflected in the beautiful tsuchime finish, which is meant to resemble splashing water. HADO is known for producing knives of very high quality, and this series clearly reflects that standard.
The blade features a two-layer construction with a core of SG2 steel. This steel is forged by the renowned bladesmith Tanaka. The blade is then carefully and thinly ground, resulting in excellent cutting performance.

SG2 steel, also known as Super Gold 2 or R2 steel, is a high-quality powdered steel known for its exceptional properties in knife making. SG2 steel was developed by Takefu Special Steel Co. Ltd. in Japan and consists of a combination of a high carbon content and added elements such as chromium, molybdenum and vanadium.
The composition of this steel results in excellent edge retention, high hardness and good corrosion resistance, making it very popular with professional chefs and enthusiastic home hobbyists. The fine structure of SG2 steel ensures precise sharpening and high finish in sharpness, with the great advantage of being able to retain their sharpness for a long time, even with intensive use.
The young craftsmen (around 40 years old) produce double V-sharpened blades in a traditional way. This method of finishing produces an extremely thin and sharp cutting edge, but is extremely difficult to obtain. Thanks to hand-sharpening, as is done at HADO, the finish is of a high class. Refined and thin are its characteristics. HADO is now available in 4 series: Sumi, white #2 steel with a stainless outside layer. Ginsan, ginsan steel with a stainless outside layer. Janpaku, white #1 steel with a stainless ouside layer. The white #1 steel is difficult to forge and it doesn't get any easier with a stainless steel outside layer. You see white #2 a lot more, because it is friendlier to forge and more artisans master it. Finally, the Shiosai series has been added to the collection, this SG2 steel comes from Takefu in Echisen. By the way, HADO does not do the forging in-house, but has it outsourced by Tanaka san, a well-known blacksmith from Osaka, who also works for Baba Hamono.
