MATSUBARA Blue #2 series

A fully handmade knife with a rugged, authentic character. Tanaka-san makes the blade slightly taller than we are used to with our other knives. This gives the knife a little more weight, providing a greater sense of control and stability while cutting. The taller blade also creates a beautiful contact surface with the product, giving you excellent control with every cut.

The blade is hand-ground to be exceptionally thin and refined. As a result, the knife is very thin behind the edge, creating minimal resistance when cutting. Combined with the razor-sharp edge, this delivers that unmistakable wow effect: the knife glides effortlessly through the product.
